This chocolate hazelnut muffins recipe that I came up with by varying a favorite chocolate muffin recipe and adding chopped hazelnuts. I buy and use a bag of “Oregon Hazelnuts” from Trader Joe’s, then chop them in a food processor.

It’s the beginning of the New Year, and like many others, my resolutions include eating and living more healthfully.
This past year I did ok – I didn’t gain weight, but I didn’t lose any either (I’m still trying to lose those pesky last 10 pregnancy pounds!).
A couple ways I plan to eat better are to buy more whole and organic foods and to try new healthful recipes without spending more money. Fortunately, Trader Joe’s, my FAVORITE grocery store for buying whole, natural and organic foods for less, now has 7 locations in the Twin Cities area (there were only 3 a few years ago), so I’ll be able to shop there more easily and frequently! (See my previous post, “Ten grocery items I LOVE at Trader Joe’s.”)
And just recently I heard about a cookbook called Livin’ Lean with Trader Joe’s: Lose Weight and Feel Great Using Trader Joe’s Products by Jamie Davidson, M.S., and was very eager to try it. I received both this cookbook and another book Jamie wrote, Quick and Healthy Meals from Trader Joe’s for review, and was very impressed – they’re both full of flavorful and nutritious recipes that are easy to follow and include all kinds of ingredients from Trader Joe’s – some that are familiar, others that I’d never heard of!
This is my FAVORITE ice cream, ever. Homemade mint ice cream with chocolate chips. Every time I make it, it’s gone within 2 or 3 days. Whenever my parents come to visit, my dad requests it in advance because it’s his favorite, too (and he eats it all!).
The secret to its creaminess is that it’s actually a custard made with eggs (but don’t worry…they’re cooked).
Note – you need an ice cream machine/freezer for this. I got a Cuisinart ice cream machine for my birthday 2 years ago for around $50 and it has been well used year round. Once you’ve tried homemade ice cream, you won’t want to go back to store bought! Homemade is best – and easy!

To me, nothing’s better than chocolate and mint together. I found this double chocolate mint cookies recipe online a couple years ago – this is my own tweaked version. Note: It’s hard to eat only one of these!
1/2 cup butter (1 stick), softened
2/3 cup sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder (I use Trader Joe’s unsweetened cocoa powder)
1/4 + 1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon Peppermint Extract
1/3 cup water
1/2 cup Andes Crème de Menthe Baking chips + 1/2 cup semi-sweet chocolate chips, OR 1 cup Nestle Toll House Winter Chocolate Chips (crème de menthe and dark chocolate –which is what I used)

This is a delicious and simple Pork Chops with Mushroom Gravy Recipe that I got from a friend. They smell SO good when they’re baking in your oven! The pork chops turn out very tender and easy for kids to eat.
Pork Chops, bone-in (I used 4 large chops)
2 Tbs. of butter
1 large can of cream of mushroom soup
1/2 can water
2 Tbs. of minced onion (dried, not fresh)
1/2 cup sour cream
salt & pepper to taste
1. Preheat oven to 325 degrees.
2. Melt 2 Tbs. butter in fry pan. Season chops w/salt and pepper. Brown on each side 2-3 min.
3. Combine cream of mushroom soup, water, minced onion and sour cream in bowl.
4. Grease corningware or other baking dish. Lay pork chops in dish, pour soup mixture over pork chops.
5. Cover with foil and bake for 1 hour. Remove foil and bake for 1 hour uncovered.
