This is a potato soup recipe from Nancy, a friend from church. It’s simple, very good, frugal and filling!
What you need
2-1/2 cups peeled, diced potatoes
1-1/4 cup water
1/4 cup butter
3-1/2 cups milk
1/4 cup chopped onion
1/4 tsp. thyme (don’t omit)
2 tsp. instant chicken bouillion
2 Tbls. flour
Bacon (cooked, cut into small pieces – I like Trader Joe’s turkey bacon)
Shredded sharp cheddar cheese (I use 1/3 cup or so)
How to Make it
1. Combine potatoes, water and butter. Heat until boiling.
2. Reduce heat & simmer uncovered 15 min. Stir often.
3. Stir in flour, bouillion and thyme.
4. Remove from heat and stir in milk, bacon and cheese. Stir until cheese melts (may need to put back on burner on low).
Serves approx. 4.
Note: Can omit cheese.
